There are some things you really shouldn’t mess with, and for the longest time I mistakenly thought pimento cheese was one of them. At an Easter party, someone made homemade (the only way to eat it in my opinion. that crap in the tub is NOT) pimento cheese and I was tempted to eat the entire bowl. It was amazing, and it got me to thinking that pimento cheese is loaded with fat and calories and maybe I could make it better for me. So I hit the kitchen with my ingredients, my kitchen scale, lots of bowls and measuring spoons, and this recipe was born.
You'll want to double this recipe! Eat it with Fritos (my favorite), as a sandwich spread (and good God don't toast it or heat it!), a dip for veggies, or just eat it with a spoon. Take it to your next block party and watch it disappear. No one will ever know it's light!

- Gently fold all ingredients together and serve. You don't want to mix it to death because then you'll end up with cheese paste. Ew!

Please feel free to tweak it to your own tastes. I prefer my cheese grated finely. You could buy pre-shredded cheese if you like, but I personally think cheese tastes so much better when you grate it yourself. Add more salt and pepper, or other spices!
